We have spoken about how smells can evoke memories we didn't realise we had kept and cooking a ham at Christmas does that for me. I am a vegetarian but filling the house with the smell of honey, cloves and cinnamon on Christmas Eve whilst preparing a ham for Christmas Day dinner has become a bit of a tradition. This year I am adding the the Christmas smell tradition by infusing a jar of sugar in with festive scents and tastes.
I have had vanilla infused sugar a few times and it always adds the wow factor to a cup of coffee. I am putting a bit of a christmas spin on vanilla infused sugar by adding cinnamon and star anise.
It is important to use an air tight jar or container to avoid letting any moisture in. Once you have popped all your ingredients in leave it for 2-3 weeks to let the sugar infuse. I chose to split the vanilla pod in two and place both halves in the jar to really give it a full kick but if you prefer something a little more subtle only use half.
Once 2-3 weeks have passed remove the vanilla pods, star anise and cinnamon sticks and you will be left with a jar full of Christmas!
